Recipe: Grilled Pork Loin with Apple and Sage
This recipe is designed to be approachable for the home cook while delivering impressive flavor.

Ingredients:
- 1.5-2 lb pork loin roast, trimmed
- 2 tbsp olive oil
- 1 tbsp fresh sage, finely chopped (or 1 tsp dried sage)
- 1 tsp fresh rosemary, finely chopped (optional, but recommended)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika (optional, for extra depth)
- Salt and freshly ground black pepper to taste
- 2 large apples (such as Honeycrisp, Gala, or Fuji), cored and cut into 1/2-inch thick wedges
- 1 tbsp butter
- 1 tbsp maple syrup (or brown sugar)
- 1/4 cup Delicato wine (for deglazing/sauce)
Instructions:
- Prepare the Pork Loin: Pat the pork loin dry with paper towels. In a small bowl, combine the olive oil, chopped sage, rosemary (if using), garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture evenly all over the pork loin. For best flavor, let it marinate at room temperature for 20-30 minutes, or refrigerate for 2-4 hours.
- Preheat Grill: Preheat your grill to medium-high heat (around 400-450°F / 200-230°C). For best results with pork loin, consider setting up a two-zone grill if possible (one side hot, one side indirect).
- Grill the Pork Loin: Sear the pork loin over direct heat for 2-3 minutes per side until nicely browned. Then, move it to indirect heat (if using a two-zone grill) or reduce the heat to medium-low, close the lid, and cook for 20-30 minutes, turning occasionally, until the internal temperature reaches 140-145°F (60-63°C) for medium-rare to medium.
- Cook the Apples: While the pork is grilling, prepare the apples. In a cast-iron skillet (which can go on the grill) or a regular skillet on the stovetop, melt the butter over medium heat. Add the apple wedges and cook for 5-7 minutes, turning occasionally, until they start to soften and caramelize slightly. Stir in the maple syrup and cook for another 1-2 minutes. Pour in the wine and let it simmer for a minute, scraping up any browned bits from the bottom of the pan to create a light sauce. Season with a pinch of salt and pepper if desired.
- Rest and Serve: Once the pork loin reaches the desired internal temperature, remove it from the grill and let it rest on a cutting board, tented loosely with foil, for 5-10 minutes. This allows the juices to redistribute, ensuring a tender and flavorful result. Slice the pork loin into medallions.
- Plate: Serve the sliced pork loin alongside the warm apple and sage mixture. Pour any remaining sauce from the apples over the pork.
