The Art of the Roast: A Savory Easter Recipe & Wine Pairing

The Recipe: Lemon & Herb Roasted Spring Chicken

While lamb is a classic, a perfectly roasted chicken offers a lighter, elegant alternative that allows the nuanced fruit notes of a red blend to truly shine.

Ingredients

  • 1 (4-5 lb) whole roasting chicken

  • 4 tbsp unsalted butter, softened

  • 3 cloves garlic, minced

  • 1 tbsp fresh thyme, chopped

  • 1 tbsp fresh rosemary, chopped

  • 1 lemon, halved

  • 1 lb baby potatoes and carrots (tossed in olive oil)

  • Salt and cracked black pepper to taste

Instructions

  1. Prep the Bird: Preheat your oven to 425°F. Pat the chicken completely dry (this is the secret to crispy skin!).

  2. Season: Mix the softened butter with garlic, thyme, and rosemary. Rub the mixture under the skin of the breast and all over the outside. Generously season with salt and pepper.

  3. Stuff & Surround: Stuff the lemon halves into the cavity. Place the chicken in a roasting pan and surround it with the seasoned potatoes and carrots.

  4. Roast: Turn oven down to 375°F Roast for 1 hour to 1 hour and 15 minutes, or until the internal temperature hits 165°F and the juices run clear.

  5. Rest: Let the chicken rest for 15 minutes before carving. This keeps the meat succulent and prevents the juices from escaping.
