Noodle Know-How: Master Pasta Pairings with Minnesota Wine

There is something inherently soul-warming about a bowl of pasta. Whether it’s a light, zesty linguine enjoyed on our patio overlooking Lake Minnewaska or a rich, hearty lasagna served by the fireplace during a Minnesota winter, pasta is the ultimate comfort food.

But if you really want to elevate your "noodle night," the secret lies in the pour.

At Rolling Forks Vineyards, our wines are crafted from 100% Pope County grapes. These cold-climate varietals offer unique acidities and fruit profiles that make them incredible partners for Italian-inspired cuisine. Here is our guide to mastering the art of the pasta pairing.

1. The Classic Red Sauce: Marquette & Marinara

When you’re serving a traditional spaghetti marinara or a meat-heavy Bolognese, you need a wine with enough structure to stand up to the acidity of the tomatoes.

The Pairing: Our Marquette. Why it works: Marquette is the cousin of Pinot Noir but with a bit more "punch." Its notes of cherry and black pepper complement the herbs in a red sauce, while its bright acidity cuts through the richness of ground beef or Italian sausage.

2. Creamy & Dreamy: Brianna & Fettuccine Alfredo

Rich, white sauces demand a wine that can refresh the palate between decadent, buttery bites. For a truly elevated experience, you want a wine with a hint of sweetness to balance the saltiness of the cheese.

The Pairing: Our Allegro (Brianna). Why it works: Crafted from the Brianna grape, our Allegro is a recent Double Gold winner at the San Francisco Chronicle Wine Competition. This off-dry beauty bursts with tropical notes of melon and green apple. The subtle sweetness and lush fruit profile act as a brilliant contrast to the savory, salty depth of a heavy Alfredo, making every bite feel fresh and vibrant.

3. Seafood & Citrus: Frontenac Blanc & Scampi

If your pasta features shrimp, scallops, or a simple lemon-garlic butter sauce, you want a wine that mimics those citrusy undertones.

The Pairing: Our Frontenac Blanc. Why it works: Frontenac Blanc is known for its tropical fruit aromas and bold acidity. It behaves much like a Sauvignon Blanc, making it the perfect companion for "Frutti di Mare" or a zesty shrimp linguine. It enhances the sweetness of the seafood while echoing the citrus in the sauce.

4. Pesto & Herbs: La Crescent & Basil Pesto

Pesto is vibrant, earthy, and aromatic. To match it, you need a wine that is equally "expressive" on the nose.

The Pairing: Our La Crescent. Why it works: Often compared to Riesling or Moscato, La Crescent is highly aromatic with notes of apricot and citrus blossoms. Its slight floral quality pairs beautifully with the herbaceous punch of fresh basil and the saltiness of parmesan cheese.

5. Fresh & Harmonious: Lady of the Prairie & Chicken Cacciatore

Looking for the perfect pairing for a rustic "Hunter’s Style" dish? Chicken Cacciatore, with its braised tomatoes, bell peppers, and woodsy herbs, requires a wine that offers both vibrant fruit and a smooth, balanced structure.

The Pairing: Our Lady of the Prairie.

Why it works: This intriguing red blend is a versatile companion for pasta dishes featuring rich tomato sauces and fresh herbs. A foundational pillar of Marquette provides the cherry notes and structured acidity needed to match the tomatoes, while Petite Pearl adds a plush mouthfeel and dark fruit depth. The secret ingredient is the inclusion of La Crescent, which adds an unexpected aromatic lift and a gentle sweetness that rounds out the savory peppers and herbs, creating a harmonious and captivating dining experience.

Tips for the Perfect Pour:

  • Match the Weight: Light pasta (angel hair) goes with light wine; heavy pasta (rigatoni) goes with bolder wine.
  • Consider the "Star": Is the star of the dish the sauce, the meat, or a delicate vegetable? Pair to the most prominent flavor.
  • Drink Local: There’s a saying in the wine world: "What grows together, goes together." Even if your recipe is Italian, the fresh Minnesota air and soil found in every bottle of Rolling Forks wine bring a localized "terroir" that makes a home-cooked meal feel like a special event.
